This reflective report covers the culinary experience of managing a street food stall at the South Asian student event with food fair. It provides a justification of the selected food concept which is creation of street food dishes from India which are Dogs- Misal Pav ,Plow horse- Chole Bhature, Star dabeli and Puzzle- Wada Pav. It also evaluates the technical and sensory attributes of the street food concepts and applies the new product development framework to the food product for proper evaluation.
