Standard Operational Procedure of Hobart Mixer:Figure 1: Hobart Mixer; source: (Webstaurantstore.com 2018)How it works:The mixer consists of several different parts like the agitator, drip cup-splash guardassembly, wire cage, attachment hub, control panel, apron, bowl lock lever, bowl support andmixing bowl. During the standard operating procedure, the wire cage is placed in position,and the bowl support in lock position. To operate the mixer, the start button should be longpressed. The bowl support needs to be in ‘mix position’ for mixing and ‘stir position’ forstirring before the start button is pressed. The Model HL600 has 4 mix speeds and stir speeds(Stir which is slow, speed 1 which is low, speed 2 which is medium low, speed 3 which ismedium high and speed 4 which is high). HL662 has 5 speed presets (Speed 1 which is slow,Speed 2 which is low, Meat Grind, Cheese Shred, Vegetable slice).

5Food Processing TechnologyPrior to installation of the agitator in the bowl, the bowl support is fully lowered. Thebowl is then positioned such that the alignment pins, left side of the bowl support, fitting inthe holes on the bowl, and then the bowl is put into the lock position on the bowl support.The agitator is then installed by opening the wire cage, placing the agitator in the bowl inalignment with the horizontal slot on the agitator using the shaft pins, followed by sliding theagitator up the shaft until it is latched. The bowl is then raised while the agitator is mixing theproduct. To initiate the mixing process, the bowl is placed on the bowl support, ingredientsare put in the bowl, the bowl is then locked, agitator is then placed in the bowl attached toagitator shaft, and wire cage placed in front centre position, using the arrow button on bowlswitch to get the bowl in mix position. The stir function is used for mixing ingredients.Stopping the mixer during operation stops the timer too, and is resumed by pressing the startbutton is pressed again. The speed selection is displayed on the speed window. To get themixer out of hold mode, the time selector must be turned clockwise.Safety guides:Before installation of the device, the electrical services must be tested to ensure it is asper the specifications for the machine. While placing the mixer in the operating location, itmust be ensured that sufficient space is available around the device so that the operator cannavigate around it while operating the controls, or installing and removing the bowls.Sufficient space should also be available above and the right of the device to allow theremoval of the top cover for maintenance or servicing. Oil levels must be checked before themixer is started. For the electrical connections, the electrical and grounding specifics must bein compliance to the standard electrical codes. Before executing lockout or tag outprocedures, the electrical power must be disconnected first to prevent accidentalelectrocution. During the operation of the device, hands, clothing and utensils must be outsidethe bowl, when the agitator is moving inside it. The bowl should not be used without the

While using the power bowl lift to lower the bowl intothe bowl truck, the bowl must be unlocked and swung out slightly.Do’s:Ensure the bowl is firmly placedPaddle or whip is secured in positionIngredients are in the mixer bowlEnsure the Guard Net is closedBowl is raised using the lever on the right side of mixerEnsure the mixer is started at the lowest speed, and then increasing it to the desiredspeed.Timer is set in minutesKeeping hands and body away from mixer while it is operationalAfter mixing, the speed should be returned to one and lever turned to off positionKeep the product in a clean containerThe mixer bowl should be lowered, the paddle removed, and mixing bowl is thencleanedUsing damp cloth and sanitizer to clean the exterior of the machine and guard net.Don’t:Product should not be added to the mixer while mixer is on.
