Introduction
Gluten refers to the protein which is found in the grains such as wheat, barley
and rye etc. gluten have two protein in it, one is Glutenin and the other one is gliadin.
The Gliadin impacts adversely on the health which is why gluten is considered as
adverse impacts for the health (Gumienna and Górna, 2020). The topic of Gluten is
very controversial these dy. While some health experts have regarded Gluten to be
harmful for most of the people. However, some sources have claimed that Gluten
can be safe for all the people expect for the people who have celiac diseases.
The report will aim on secondary research regarding Gluten. The report will
discuss the secondary research on if the gluten is a trendy topic or it is actually bad.
It will discuss literature review, data collection and discussion as well as reflection on
the learning.

Literature Review
As per the views of Han and et.al., (2019), Gluten is the umbrella term which
refers to the family of proteins which is commonly known as prolamins. Modern day
diets contains gluten containing grains which makes a large portion of those diets.
However, gluten proteins are highly resistant to the protease enzymes which break
down protein in the digestive tract of the humans. The gluten free diets lacks
inadequate amount of dietary fibres. It result in constipation and other ailments of
digestive systems which makes restraint. The gluten free diet is not necessarily
healthier. Gluten free foods are made with low fibre dietary. It makes the population
to adopt low fibre diets such as white rice flour, corn starch and other starches.
However, according to Reddel, Putignani and Del Chierico (2019), Gluten free
products helps in adoption of micro encapsulation technology for improving shelf life
