Introduction
Hospitality business is the most attractive industry which deals in providing services
related to food and beverage, travel, transportation and lodging facilities which provides
maximum customer satisfaction. Business tool kit assist in providing guide to business which
assist in higher growth. Industry should modify their services according to customer demands
and develop strategies accordingly (Jayawardena and et. al., 2013). For this assignment, chosen
Peelers juice cafe is the chosen firm which is located at Bishops gate, London. It specialises in
providing fresh healthy juice and salads. The project will focus on various accounting principles
for managing financial transactions and use of book keeping systems for maintaining accounting
reports. It also analyses various stages of HR life cycle and discusses performance management
plan. It also discusses different methods of communication within the departments of the
hospitality organisation.
TASK 1
P1 Principles of managing and monitoring financial performance
Their are various principles for managing and monitoring financial performance of the
company so as to achieve business growth and success. In context to Pellers juice cafe the should
use principles for managing and monitoring financial performance of the company which are
described as follows-
 Follow appropriate regulations and legislations- All the expenses and activities
incurred by the company should comply with the regulations, legislations and policies
of the company. It ensures proper and smooth functioning of the business.
 Analyse and evaluate financial budget before adopting any idea- While adopting
any idea, Peelers juice cafe should analyse their budget properly that it is feasible to
adopt or not. This would assist in managing financial performance (Bowie and et.al.,
2016).
 Evaluate and analyse financial consequences- Pellers Juice Cafe should analyse and
evaluate the financial consequences before choosing any new project. This would assist
in effective allocation of resources (Weinstein and Morritt, 2012).
 Always plan substitute for the idea- Respective cafe should should plan some
substitutes in order to safeguard them against the loss situation.

 Purchase- Purchasing refers to the activity in which organisation or business attempts to
acquire goods or services to attain its set targets. Although many companies set specific
standards in their purchasing process which greatly differs among the organisations. In
context to Peelers Juice cafe they use these standards in managing purchase process.
 Sales- It is an act of selling which involves transfer and possession of ownership or
entitlement to the service in exchange of money. In context to the chosen cafe they sell
services related to food and beverage to its customers in order to achieve business
success and attains maximum profitability (Kysilka and Csaba, 2013).
 Types of Cost- It includes cost such as direct and indirect cost which are marked as
expense to the hospitality industry. Their are fixed and variable cost which is incurred by
the respective Cafe at London. Peelers Juice Cafe should try to minimise their cost so as
to maximise their profitability.

Double Entry Book-keeping – It is an book keeping concept in which every business
transactions are recorded twice in book of accounts. It requires that amount entered in the debit
side must be equal to the amounts entered as credits. Pellers juice cafe should should maintain

Balance off rule - Usually at the end of the accounting or the financial year it is
necessary for every business to determine and balance of every ledger account so as to analyse
effectiveness of the business during the accounting period. This is known as balancing the
accounts or balancing the ledger in which accounts are closed and balanced is carried over to the
next year. It is necessary for Peelers Juice Cafe to balance all its ledger accounts so as to analyse
all the profits and losses incurred by the business during the accounting period. It assist the
business to analyse their accounting period (Legrand, Chen and Sloan, 2013). This is shown in
context to current financial action.
TASK 2
P4Stages of HR life cycle and importance of HR in supporting, growing and retaining talent for a
specific job role
HR managers at Peelers Juice Cafe is hiring the vacant position for HR executive so that
business operations are executed in a proper manner. Their are different stages to HR life cycle
which the manager at Peelers Cafe should adopt in supporting, growing and retaining talent
within the firm. It is discussed as follows-

 Recruiting- This is the first stage of HR life cycle which focuses on attracting and hiring
the suitable candidates. As HR manager at Peelers juice cafe is hiring HR executive they
should effectively develop strategies and conducts written test and interview to test
capabilities of candidates (Singh, 2015).
 On Boarding- Under this stage when the candidate is recruited and selected they are
welcomed by the managers and are made familiar with the working environment. This
could be for the work duration of 90 days in which new employees are made aware of
their roles and responsibilities.
 Development- Under this stage managers at Pellers Juice cafe provides developmental
opportunities to its employees by a way of providing training sessions which develops
their capabilities to work in a proper manner.
 Retention- This step is concerned with motivating the staff to retain in the organisation
for a longer time period. They provide various extra incentives and flexible working
hours to retain them within the cafe.
 Off Boarding- Under this stage managers of the Peelers Juice Cafe conducts exit
interviews and take feedbacks from the employees when they leave the job. This will
assist the mangers to develop effective strategies and remover their weaker points and
enhance employee retention within the firm (Legrand and et. al., 2012).
HR manager at Peelers juice Cafe needs to conduct proper analysis for the hiring of the HR
executive position which is explained below-

Performance Management plan is an framework which contains various tools and
techniques so as to manage and enhance performance of employees. Peelers Juice cafe is going
to conduct performance management plan to analyse and manage employees performance (Sipe,
2013). This plan is going to address the negative behaviour of employees and will resolve the
issues accordingly.
Role script here is going to address the rude and harsh behaviour of the employees at work place.
Discussion of this with manager and employees at Peeler juice cafe is described below-

Manager- From last few days I am noticing that you are behaving very rudely with your
colleagues and employees. Is it the way to talk to them?

Employee- No, sir my intention was not so. I was feeling very irritated and this led to
change my behaviour.
Manager- Listen.. This is not supposed to be entertained in the firm. Do you have any
suggestions regarding the same (Pirani and Arafat, 2014).
Employee- Sir, if you add add more team members to my team, work pressure will get
reduced and would perform task in a proper manner.
Manager- OK, I will try to find out more solutions to the problems and will come back
to you.
Employee- Thank you sir for understanding my problem.
Script 2
Manager- I am analysing that Mr jack is getting irritated with every employee and
behaving very harshly.
Employee – Yes sir all the employees are discussing the same.
Manager- Do you have any idea why Mr. Jack is behaving like this?
Employee- No sir, Mr jack is arguing with each other and says he doesn't care for
anyone.
Manager- Then inform Mr jack that if he don't behave properly strict actions will be
taken against him .
Employee- OK sir, I'll inform Mr jack.

P6 Legislations of hospitality organisations that has to comply with.
It is necessary for the business organisations to comply with the specific laws and
legislations for effectively performing the task. These laws will remove risk of exposure of
business and allow business to achieve higher growth and creates a healthier work place
environment. There are some legislations which Peelers Juice Cafe needs to follow are as
follows-
 Food act, 1997- This act ensures that how the the food is being prepared, quality of
ingredients used as well as ensures cleanliness and hygiene of the place while preparing
food. This act is applicable to the food and beverage industries food is prepared ensuring

high cleanliness and maintains the quality of the food items (Benckendorff and
et.al.2015).
 Work place health and safety- This act states that Peelers juice cafe should maintain
health and safety of the employees at the work place. This could be done by providing
appropriate trainings regarding the usage of various equipments and machines within the
cafe so as to reduce the risk regarding the health and safety of the employees at the work
place. This also motivates the employees to work with great dedication towards the
achievement of organisational objectives.
 Liquor Licensing Law- This act enforced in 2003 which restricts the supply of alcohol
and liquor in an unethical way. It states that Peelers Juice cafe in order to supply alcohol
and liquor should require an license to supply in the market.
These are all the acts which the Peelers Juice Cafe needs to comply and adhere with with regard
to effective performance of work within the cafe and leads business to higher growth and
profitability.
P7 Using specific examples, illustrate company, employment and contract law impact upon
decision making
Employment contract is a contract between the two parties that is the employer and the
employee which needs to adhere with the laws and regulations mentioned under the contract.
Legislations such as work place health and safety, liquor licensing law and food act needs to be
strictly followed by the employer and the employee. In order to comply with these laws
Managers at the Pellers juice cafe needs to properly mention them in employment contract so
that every employee is clear with its roles and responsibilities (Barrish, 2012). It has a major
impact upon the decision making as managers at the respective cafe has to take decisions
properly according to these laws. As the cafe deals in providing healthy juice and salads it has to
ensure that the fruits and all other ingredients used in making juice should be in high quality
and should not impact health of the consumers. While marketing and advertising their products
Managers at Pellers juice cafe needs to ensure that there are adhere to each and every law while
marketing their products. For example when the cafe needs new employee for performing
business activities it has a major impact upon the decision making as firms needs to hire skilled
and knowledgable employees who have proper knowledge regarding the work and should
arrange facilities for the training to enhance their skills for better performance. As the company

is hiring for the position of HR executive it needs to ensure that candidates posses the necessary

greatly impacts decision making of managers of Peelers Juice Cafe.
TASK 4
P8 Interrelation of the different functional roles within the hospitality sector
In order to effectively conduct business activities in a proper manner different activities
within the hospitality sector should interrelate with each other to perform effectively.
Interrelation of different functional departments within the Pellers Juice Cafe is described as
follows-
HR and Food and Beverage Department- Both the departments cannot perform well
without proper interrelation. When the F&B department of the Pellers juice cafe analyses the
need of employee it provides information to the HR department to recruit the employees with
specific skills. This way both the departments are interlinked to each other(Higgins-Desbiolles,
Moskwa and Wijesinghe, 2017).
Purchase and Accounts Department- Purchase and accounts department are both
interlinked to each other as accounting department is responsible for managing and analysing the
requirement of funds within the cafe and Purchasing department is responsible for buying raw
materials in order to make finished goods and properly provides services to the customer. Thus
for this purchasing department needs request the needs of the funds for the accounts department
to carry business activities efficiently. Moreover purchasing departments also provides accurate
information to the accounts department by providing the, memos, bills, cheque to effectively
record each and every transaction and manage financial statements within the cafe. This way
both are interrelated to each other.

P9 Different methods of communication, Coordination and monitoring applied within the
specific hospitality industry.
To work effectively it is necessary for the business firms to make use of various
communication tools to effectively coordinate with its team members and share information
properly. Their are different communication tools such as e-mails, notices, posters, presentations
and many more which the company can use are described as follows-
 E-mail- It is written formal communication tool which can used by the managers of
Peelers juice cafe to properly share information. Under this information is shared within a
short period of time and employees are made aware about the specific changes made
within the hospitality business.
 Notices- It is an effective communication tool in which employees shares information on
the notice board of the company. Any specific important information is pasted on the

notice board of the company to make the employees aware (Sobaih, Ritchie and
Jones,2012).
 Presentation- It is oral communication tool with the usage of sounds and pictures to
make the employees within the cafe aware about the information. In this communication
tool employee greatly understands the information.
CONCLUSION
From the above report it has been concluded that hospitality is the wide industry which
caters the needs of every customer according to their demands. Business firms has to carefully
manage their funds in an appropriate manner. Company should effectively develops trial balance
to know their financial status. Moreover company has to adhere with various laws and
legislations for their effective working. In order to integrate properly with its function
departments firm uses various communication tools to coordinate properly with every staff
members.
