INTRODUCTION
Hospitality industry is a broad category that provide different services to people which
includes lodging, food and drink services, event planning, theme parks and cruise line etc. The
report is also based upon case study of Carnival Corporation & PLC which is world's largest
leisure travel company and offer different variety of services to their customers. The present
study will produce a ledger and trial balance of give information and then provide two KPI.
Further, describe different stages of HR life cycle and present ways to resolve negative
behaviours of waiting staff. Moreover, study will reflect the potential impact of regulations,
legislation and some ethical principles for Carnival UK and then present different methods of
communication, co-ordination and monitoring in food and beverages department.

towards an intended result. Two key performance indicators are as mentioned below:

 Balance Scorecard: It is the tool that focuses on company's strategic goals and also
helps to choose right things for the welfare of the company. Earlier company's judge their
performance by how much income they generate but now Balance Scorecard provides an
idea of looking at strategic measures with a traditional financial measures in order to
identify exact performance (Parmenter, 2015).
 Benchmarking: This is the process of measuring entire performance of restaurants
products, services as compared to other companies. Further, it also helps to drill down
into performance gap to determine the areas of improvements. Thus, it provides
continuous and dramatic improvement opportunities for a company (Ogunlana, 2018).
There are different principles of managing and monitoring financial performance of a
restaurant such as:
 A budget planning should be effective such that it achieve goals and objectives of a firm.
 There is a need to keep detecting the changes by comparing actual financial results to a
budget.
 The Manager should determine all expenditure that must comply with all relevant
policies, rules and regulations (McCabe and et.al., 2019).
 Proper review of financial performance should be measured by using different KPI that
helps to determine whether the business is meet out with intended results or not.

Describing different stages of the HR Life Cycle
There are five different stages of HR life cycle such as:

Recruiting: Hiring the right person is the vital for the growth and productivity of every
business. That is why being a manager of Cruise ship, there is a need to create strategic staffing
plan that helps to identify the need of employee and company as well. Apart from this, talent
acquisition software also help the HR to attract top talent for the business or vacant position.
On-boarding: It is the process of getting successful applicant introduce themselves in the
company so that they feel comfortable and considered themselves as a part of a firm
(Salamzadeh and Kawamorita Kesim, 2015). Therefore, HR of firm will help them to learn about
company's policies, procedure and provide training sessions as well.
Enablement: in this stage, the manager of the Cruise bar entails orienting new hires and
formally introduces those from an organization and the company's culture, mission, vision and
values. Therefore, the orientation is basically conducted as a conference style event in which all
the information is delivered to new hire through presentation (HR life cycle, 2018).

Career development: in this stage, the manager or HR work out for long term career
goals to work within a company for a long period. Moreover, if employee established themselves
at a firm and HR must try to help in order to meet their goals. Such that they try to prepare
employee to become more responsible for their position (Cascio, 2015).
Termination: Some employee leave a firm or retire and at that time, it is the duty of
Food and Beverage manager to make sure that all policies and procedure are followed and also
carry out an exit interview if that is company policy and removing an employee from a system.
Presenting importance of these HR Life Cycle stages for Talent Management
Recruiting: In this stage of HR life cycle, helps to attract top talents for vacant position
in the quoted form by using better recruitment planning (Pessima and Dietz, 2019).
Onboarding: In next stage, the HR will select the best candidate whose resume look
promising and by interview they offer job to those applicants. If the accepted then provide
training session that also help to achieve long term goals. This stage also helps to convey the
exact message and provide brief culture about the company to make the employee comfortable in
the working area.
Enablement: In this stage, Manager of the firm will provide introduction of company
and also ensures that the employees are also an important part and provide all necessary
information regarding the company so that they feel comfortable.
Career development: In this stage, employee are prepared as per organization and for
this reason, HR also carrying out on boarding programs, conduct aptitude and proficiency test
that helps to enhance their skills and this stage is important as it helps to keep engage the
employees into working place.
Termination: Talent management aim at the overall transformation of the employee in
order to achieve organizational vision by retirement benefits to employee and conduct exit
interview as well. This stage is quite important as it helps to manage all policies and procedures

employees and if they do extra work then it is the responsibility of the firm to provide extra
wages (de Sosa and et. al., 2018). Apart from this, no individual should be discriminate on the
basis of caste, race, gender and religion.

In Carnival UK, there are different functional roles and they all are interrelate with each other in
many ways such that:
The human Resource department of the quoted firm main work is to recruit the best candidate
for a business so that they keep producing the best output as per analysing the needs of their
customers. Further this department is directly interrelate with other functional roles in
hospitality sector or this department closely work with other department such that it directly
link with research and development department of the company such that R&D basically finds
the need of the customers and then tell it to the HR department so that it hire those candidate
who fulfil the needs of their customers (Wizniuk and Kumar, 2018).
Further, finance department and marketing department of Carnival UK is also interrelate with
other such that when a new services is offered by the firm then at that time marketing
department of the company will uses promotional tools in order to make it popular in the
market, while on the other side, finance department allotted money to all department for their
expenses.
In addition to this, operational department is also closely work with research and development
department such that R&D planned to satisfy the current and future customer needs and while
manufacturing or planning the items, operational department checks the quality and design

communication, the manager of the firm may use oral communication so that everyone in the
premises listen properly. This helps in face to face interaction that permits not only exchange of
words, but also provides non- verbal communication as well.
Further, written communication can also be used in which exact message is delivered and to
now the firm also uses email to communicate the important message to all the employees in
single way (Berger, 2019). Further, another method is face to face communication, which is
used at the time of meeting and the owner wants to deliver some important message to their
employees.
Methods of Co-ordination: there should be proper coordination with all the department
because they all are interlinked with each other. The best and effective method of coordination
is better communication such that a good communication prevents the food and beverages
department from disputes, conflicts and delays. Further, it has been analysed that the
department should have clearly defined objectives and for achieving proper coordination, there
must be unity of purpose.
Formation of committee is another method that promote coordination through better and free
interchange of ideas, feelings and opinions. Lastly, it will be more effective and long lasting
when it is achieved through voluntary cooperation of an employees.
Methods of Monitoring: To monitoring the department, it is recommended to use Key
performance indicators such as balance scorecard, Benchmarking that helps to identify whether
the business in leads towards progress or not (Lampert and et.al., 2019). Taking feedback from
the employees and peers is another method of monitoring that helps to determine the company
