INTRODUCTION
In today's modern era, hospitality has become one of the major income generator for the
economies of several counties. It is the most important factor of tour and travel sector.
Hospitality industries in itself is a major independent sector as well. In UK, about 180000
hospitality industries which provide employment more than 2 million people. Restaurants, tour
and travel agencies, hotels, pubs are included in the hospitality sector. In UK the major
contributor to the economies is hospitality industries. This sector is entirely depends on the
confidence of costumers as well as persuasion of business. Consumers exert great pressure on the
hospitality industries to innovate and render value to the end customers. In this assignment,
Hilton Hotel of UK. It deals in accommodation facility, food and beverages, holiday packages,
flight packages, medical facility, insurance facility and many other business which are the parts
of hospitality.
TASK 1
1.1. Analysis the current scale, scope and diversity of the hospitality industry.
In 2012-2013, UK was ranked 4th biggest industry in hospitality sector. The turnover is
about more than £53 billion in 2011-2013 to the economy of nation. Hospitality industries has
positive impact on the community. It also contributes in providing employment to large number
of people which is recorded about 12% of population is engaged in hospitality industries.
Business Hospitality Association(BHA) has predicated that about 300000 jobs will be added
more in 2020 which contributes large in growth and development in UK. There are numerous
amounts of hospitality industries such as hotels, pubs, restaurants, catering, bars, clubs etc
(Murphy and et.al, 2018).
UK is also providing employment to female which is the most prominent factors in
hospitality industries. About 56% of female are employed in hospitality industries of UK. It also
recruits young generation of UK, under the age of 30 years of people are working in this sector.
The best factor in Hospitality is, it provided full-time jobs as well. About 55% people work full-
time whereas 25% are migrant employees. There are many big players in this sector of
hospitality such as Hilton hotel, Marriott Hotel, Mitchell's and butlers and McDonald's
Restaurants. These all are the major players in UK which are contributing large to the economy
of nation. However, there are small and medium scale companies also operating in the sector of
hospitality (Ram,2018). About 1.7 people are employed in hospitality sector of UK. The

hospitality sectors of UK is one of the most challenging times as the economy remains inactive
in nature. Disregard of slowly growth and cautious spending by consumers, theirs is tremendous
growth in potential industries in upcoming time. In 2012, about 149000 tourist from China has
visited UK which is recorded more than double visiting Australia. These all reports and statical
informations shows that in-spite of slowly growth of the economy, hospitality sector has
contributing large and make balance in devaluation of economy. It is not only in UK, the
hospitality industries of other countries are also contributing large to their economy (Williams,
and Horodnic, 2017).
1.2 Organizational structure of different hospitality organizations
Organizational structure can be determined as the ways through which activities like
coordination, allocation of task and supervision are made. Different companies make use of their
own type of structure and this is done so that work can be managed in effective manner. There
are various type of structure and some of them are as follows:
Functional structure: In an organization, there are different departments that are focused on
performing their own respective roles (Barrows, Powers and Powers, 2012). This is a type of
structure in which each department has their s manager who will look after their employees and
each manager will be under senior head. This is an effective form of structure that is effective
enough to communicate with their managers but the process is too slow as there are many levels
involved. Hilton hotel (International brand) make use of this structure and this enables them to
have systematic management of work.
Divisional structure: As per this type of structure, there are different basis on which departments
are formed. For example, it includes functions, products, geographical territory, etc. This is most
suitable for catering companies. Example of the firm that make use of structure is Harrison
Catering Services Ltd. There are department working together and each of them have their own
separate division like preparation food, decoration, care and support, etc.
Flat structure: In accordance with this structure, there are only few of the employees involved.
In other words, there are no levels involved among management and workers (Crotts, Buhalis
and March, 2010). This is an effective structure as the rate of confusions are low and immediate

1.3 Role of hospitality related organisations and professional bodies
In this modern work, the rate of hospitality related organizations are increasing drastically.
However, objectives set by these firms are usually same. In this context, below given are the
objectives that are set:
Organizing different policy, benefit services and funding
To coordinate horizontally and vertically at various industrial levels (Jones, Comfort and Hillier,
2016).
Designing strategies, monitoring and implementations within hospitality industry.
Various type of institutions in industry are categorised as environmental and social companies,
non-government, government institutes, state sponsored economic agencies, etc. As this industry
has changing nature and so other significant roles recognizes supranational and sub national
lines, trans-territorial and British Hospitality Association.
British Hospitality Association: This organization is focused on implementing new
policies that are enables to create new jobs. Further, it contributes towards export earnings. In
addition to this, they also create competitive advantages for UK (Manaktola and Jauhari, 2017).
Supranational level: This consists of International Aviation Transport Association
(IATA), United Nations World Tourism Organization (UNWTO), World Travel and Tourism
Council (WTTC). These all tent to steer various policies that come from other government at
right destinations that can affect policies related with tourism on sub national and national levels.
British Institute of Innkeepers: They represent workers across hospitality industry. Apart
from this, they also provide support and advice to other companies. In addition to this, they
promote professional standards.

2.1 Staffing requirements of different hospitality businesses
In hospitality businesses, there are broad type of occupations at all levels. For each of these level
it is important that individuals have proper training and educations for the same. With this
respect, below given are various type of staffing requirements:
Food Service management: For a restaurant manager, it is important to oversee their day to day
operations. Further, their roles includes hiring, discipline, and training and also ensures
satisfaction of customers (Rutherford and O’Fallon, 2017). In this modern world, people are
health conscious and they prefer to get high quality services for themselves. It is required by the
individuals to provide associates and bachelor’s degrees to managers. Apart from this, it also
requires internship to provide experience in the field.
Accommodation and hotel management: They are the one who oversee all operations within
hotel to make sure that customers get quality experience. Further, they also provide direction to
staff in different areas of hotel like room service, housekeeping, marketing and security, etc.
Large hotel hire hotel managers so that all the operations within hotel can be taken care in
appropriate manner. Hotel management prefer hire managers who have at least bachelor’s
degree. Apart from this, management degree program include accounting, marketing,
maintenance, food services, etc.
Housekeeping staff: Resorts, motels and hotels hire people who have experience in this area to
keep guest accommodation clean (Manaktola and Jauhari, 2017). In order to provide high quality
services, it is required to make sure that appropriate steps are taken in which guest get satisfied.
Travel agent: This is helpful enough for customers to make their travel efficiently. In order
words, it helps customers to book lodging, transportation, entertainment, etc. Further, they also
develop packages in which services and destinations are included. All these help to satisfy their
desired goals.
2.2 Roles, responsibilities and qualification requirements for hospitality staff
There are many posts that are included in hospitality sectors. It is important that all workers have
proper understanding about the things that they have to perform (Jones, Comfort and Hillier,
2016). In situations when they do not have proper understanding for the same, then causes
serious issue for the business to attain their set of goals and objectives. With this respect, below
given are roles, responsibilities and qualification of different requirements in hospitality staff:

Supervisor: They are the one who is responsible for overseeing operations and to provide other
employees with training so they develop their skill and capabilities. Apart from this, they are
required to manage and order inventory. In accordance with the qualification, it is important for
them to have degree for business management.
Manager: These people make sure sales and profitability of the organization are properly
analysed and planned. Further, they are also focused on mainlining the standards for restaurant.
Apart from this, they monitor employees so that their performance can be analysed and
accordingly they are provided with training (Crotts, Buhalis and March, 2010). As per their
qualification, they should have associate degree and interpersonal skills. In conditions when
managers do not have proper understanding about the roles that has to be played by them, then it
causes serious issue to the business to grow in effective manner.
Management trainee: Daily they are assigned with responsibilities and they attend training
programs. Apart from this, they also cross train in different departments. In addition to this, they
need to have associate degree or certificate. In accordance with their skills, it is important that
they possess skills like communication, interpersonal skills, administrations skills, etc.
Volunteer: They are the one who support team members and report hazards. Apart from this,
they are punctual and focus on carrying out their roles in appropriate manner. In accordance with
the qualification, they do not require any (Barrows, Powers and Powers, 2012). However, they
are expected to have communication skills, problem solving, decision making, etc. All these are
helpful for them to understand the aspects through which they support people to grow in
appropriate manner.
CONCLUSION
From this report, it can be stated that management of hotels are expected to understand the need
and requirement of customers and take up steps in appropriate manner. It is essential to have
proper process used for recruitment and selection so that most suitable people can be hired. Apart
from this, workers should be provided with training and this should be provided to them as per
the areas in which they lack. When employees are provided with training, then it help the
business to grow in positive direction. Time to time innovations need to be done so that sale and
profitability of the organization can be raised.
