INTRODUCTION
Food and beverage industry is one of the growing industries in UK that speedily grow at
a fast speed rate. It is one of the largest manufacturing sector of UK. It is the industry in which
many types of business are run at a good speed (Edelman and Gunawan, 2020). Food and
beverage industry is concerned with providing food items and drinks to customers which
satisfies their need and wants. It is identified that many people run their business very well in
food and beverage industry because everyone now wants to eat from outside because of their
busy schedule. So that’s why it I increasing at a very high speed. In this context, The Kitchin is
undertaken for analysing food and beverage industry. The Kitchin is the restaurant of UK that
serves best food services to their customers. This report covers the different types of business
and current trends in food and beverage industry. It also covers a brief comparative analysis of
different business in this industry. This report also focusing on rating systems with the discussion
of current and future trends. It also discussing the comparison between operational and
marketing techniques.

P1 Different types of business of the food and beverage industry
Food and beverage industry is another most growing industry in the world that gives a
great contribution to the global as well as country's economy. It is identified that UK's food and
beverage industry remain in the leading business even in recession period. In UK, it is identified
in the food and beverage industry that they are remarkably show their growth and position. This
sector employee around 4.7 million people (Ramanathan and et. al., 2017). It gives a big
opportunity for unemployed person. It includes many type of food business such as fast-food
joints, cafeterias, pubs, food transportation services, restaurants, cafés, catering businesses, food
manufacturing operations, etc. It can be further explained very well in below points:
Restaurants: It is the institution in which food is preparing by chefs in order to fulfil the
demand of their customers. They provide food and drinks to customers with particular
consideration that they decide in their menu card. It is identifying that many restaurants provide
services like free delivery and take out. It really helps in increase number of customers because
there are many people who have not time to wait for their preparation time. So that’s they choose

option according to their preferences (Aadil and et. al., 2019). In restaurants there are many types
of cuisines that served by restaurant according to their chefs with special focus on their food
quality. The Kitchin is the Michelin starred restaurants that win many awards due to their
service. Their top class services, healthy and safe food make at this position. They take all
measures in the pandemic situations.
Cafes: It is just type of restaurants that serves tea and coffee to the people. They also
provide baked snacks and food as they are serving light refreshment to the customers. The main
purpose of opening cafes is to provide some refreshment in brunch timings when people are not
want to eat heavy foods then they choose cafes. It becomes more popular in modern times and
because of that reason now restaurants open their separate cafes so that they can invites more and
more customers. It is becoming more popular because now every person wants to eat some light
so that they can refresh from anxiety (Gardijan and Lukač, 2018). The main purpose of choosing
cafes is that now people want to focus on fitness so they avoid heavy food and focus on light
food and beverages. This is the main reason that why The Kitchin has want to open their own
cafe.
Catering Business: It is the type of company that now growing at increasing rate. It is
the company in which they conduct events as per demand of public. They conduct events in
which it includes the wedding, birthday parties, business party, etc. A person who run their
company hire many caterers who serves the food item that they prepare for serving food items.
They also hire some cook who make food items for event. The events are now increasing day by
day because every person who conduct event for the celebration purpose. So catering business is
also good if anyone want to grow their career in this respect.
Food manufacturing operations: This type of business is doing by those companies
who want to process raw material into finished goods. It becomes necessary for them that they
should collect the raw material at a good quality so that they can provide finished goods (Berry
and Deuster, 2017). It includes all those company from which other business that comes under in
food and beverages industry purchase from these companies and made their food items for
serving to the customers.
It is analysed from the above discussion that there are different types of business that
comes under in food and beverages' industry. It is very necessary for The Kitchin that they
should take initiatives for improving their operations.

There are some different types of rating systems in the food and beverage industry which
helps in analysing restaurant food service (Lestari and Murjito, 2020). It assists in taking review
for restaurant that generally taking by customers so that they can make decision for going or not
in the restaurant. Some rating systems are mentioned below:
International level:
Michelin starred rating systems: It is the most important and high-rated systems in
which every restaurant wants that they achieve this rating. But it is not easy for any restaurant.
The Kitchin is the Michelin starred rating restaurants and that's why it becomes one of the
popular restaurant that serve best food to the customers. They are expensive and made best food.
The Kitchin is known for Toms' Scottish food that become best food in UK. So because of their
quality they become the Michelin Starred person.
National level
Star rating systems: All most every restaurant is focusing on raising their stars for their
restaurant so that customers get attracted and come for taking experience. In this rating system
they have 5 stars that are divided into categorises such as excellent, good, average, bad, and
worst. So this rating system gives ideas and reviews to the customers. They can take a decision
accordingly. Every restaurant has a rating guide which can be access by any customers so that
they can take their decision. It also helps to customers to give their experience to restaurants and
following their ratings restaurant can take necessary measures for improving their services. It is
very necessary for customers as well as restaurant.
Zagat Rating System: It is another type of rating systems that helps restaurants, hotels,
cafes, etc. It includes 30 scale points in which they get scored with a viewing their rooms,
service, dining and public facilities (Gebauer, 2020). They get rating on the basis of their
facilities and services, it covers mostly hotels because they provide high range of services to the
customers so that's why generally they are come under this category. It becomes important for
travellers because they need to stay in hotels which are clean and fit to their personality. It is also
recommended to celebrities because they are concerned with the best quality of hotels.

For successful business that run by The Kitchin they should be follow future and current
trends so that they can understand the market and take actions accordingly. If they are not run
according to ongoing trend, then they can become in the problems. So that's why they should be
identify and analysed the current and future trends.
Current trends: It is the trends in which restaurant analysed the present scenario of
market, there are many things that they should be considered while implement some changes in
the restaurant (Tantayanubutr and Panjakajornsak, 2017). For example, veganism, healthy
eating,etc. They firstly identify all trends that are presently going on so that they can invite
customers. The current trends are: Veganism: It is the growing trend that run in this era as. It is the trend in which every
person wants to avoid animal from their food items.
Healthy Eating: Everyone is now focusing on healthy eating because of every person
want to become health conscious so that they can improve their fitness.
The Future Trends: There are some trend that come in the future which should be
mange by restaurant so that they are becoming more updated with the trend and take competitive
advantage. It is identified that now restaurants are plant-forward focus in which they grow their
crops so that they can provide organic food items with health standards. Another trend is in-tune
with immune which focuses on building immune systems with the help of food. For example,
sustainable business becomes a trend so companies need to focus in their business practices as
they should be sustainable.

P7 Factors that influence consumers’ decision in order to select the outlet of food and beverage.
There are some factors that affect consumer’s decision while they are choosing for
selection of restaurants. All important factors are mentioned below that helps in taking right
decision:
Health and safety: It is the important actors that affects consumers' decision because
every person wants to put health in their top proprieties. For that purpose, Restaurants always
make sure that they take all precautions for maintaining health and safety in the restaurant.
Prices: It is another important factors that affect their decision as they are focusing on
price of food items that they want to eat. It is not necessary that every person has enough money
to spend on expensive food (Özdemir, Çolak and Shmilli, 2019). Restaurants expensive
restaurant because the food is preparing by Michelin star chef. So it should be affordable and
reasonable so that every person can afford their food items.
Food Quality and other facilities: It is very important for restaurants that they provide
some additional facilities such as discounts, offers, basic necessities, etc. It attracts customers
which assist in achievement of their goals and objectives.

loyalty.
Attracting customers is the main agenda of every restaurant and because of that The
Kitchin adopt some strategies to improve more. Those strategies are mentioned below:
Restaurant can be use more communication skills so that they can communicate with
their customers for analysing their behaviour with respect of choices in food.
Attached with each and every customer through social media so that they can know new
offers.
They should use some occasional events in which they provide some discounts for every
customer.
Loyalty card provided to regular customers so that they get more benefits.
Always send thank you notes after customer eating from their restaurants.
Promote their restaurants with some benefits giving to their existing customers that helps
in mouth marketing.
