INTRODUCTION
Hospitality is defined as the connection among a guest & a host in order to provide them
effective services so that demand of persons can be fulfilled. Restaurant and hotels have
emphasis to provide quality services which is helpful to satisfy the desires of guest. To better
understand this concept Carnival Corporation & PLC has chosen which is a British- American
cruise operator. In this report there are following topics are covered such as: ledger accounts &
Trial balance, HR life cycle for Talent Management, law in hospitality industry, performance
management plan. Apart from this it also discuss about importance of coordinating & integrating
various functions of departments with in hospitality sector.

2 Key Performance Indicators for Restaurants
Key performance indicators: Key performance indicators measure the performance of
employees that shows how efficiently an organisation is accomplishing its key business
objectives. Every enterprises apply KPI at all level to track the performance of employees that
helps to maintain the employees in order to increase productivity. For example, Carnaval is UK
based service provider company that focuses on increase in number of customer by providing
services. It includes following points that shows company's profitability situation such as cost,
revenues, profits, cost of good sold, day outstanding sales and sales by region. Manager of
Carnaval restaurant monitor and control employees performance and give awards for their good
performance. Reward, appraisal and bonus to employees help to attract and inspire employees to
be sustain in organisation. KPI follow two type of performance indicator that helps to attract the
customer such as-
Quantitative: Quantitative indicators means any organisation can be present or show
employees performance with a number. Quantitative variables is the proper way to measure the
employee's performance which it can be use to analysis the measures. Such as Carnaval is
international restaurant which provides its services to customer its customer in order to make
profits. It has large number of employees who are working at there and provide satisfaction to
customer. Manager of the Carnaval restaurant manage and monitor all employees performance
that helps to increase profits of the company by increasing in number of consumer. It impact on
financial performance such as if number of customer will be increase then revenues also would
be increase that will be beneficial for restaurant. Manager evaluate the employees performance
through Quantitative indicators and guide them how it can be best (Reid and Patiar, 2017).

Qualitative: Qualitative indicators means any organisation can not present or show
employees performance in number or percentage. It is not proper way to measure the staff
performance who gives their services in restaurant. For example, manager of Carnaval restaurant
evaluate and monitor employee's performance without number. Manager do not present
employees performance through rating indicators that create issues between employees and
employer. Manager need to manage and control employees performance after analysing their
work performance. It also helps in financial activity by satisfying customer from its services.
Manager need to adopt best strategy to evaluate and present employees performance that helps to
attract and to be continue the organisation.
Recommendations : It has been recommended that it is required for the Carnaval
restaurant to set a specific standard so that all employees can perform as per the requirement so
that needs of consumers can be satisfy. It is helpful for the organisation to maximize the
productivity. By applying the key performance indicators corporation can improve its
performance as well as cost will also minimize which leads to higher profits. By analysing the
performance of employees restaurant can know the abilities of them and on the basis of it
training can be provided for the further improvements.

HR life cycle importance in context to strategic talent management
To manage the staffs, HR life cycle plays an important role and it is a combination of five
stages which involves recruitment, motivation, education, evaluation and celebration. These five
stages are helpful to manage and run the business operations of Carnival Corporation. The
importance of HR life cycle is describe below:
Increase employee performance: The HR life cycle provide help to improve the
performance of staffs because it focuses to conduct training programme which support strategic
talent management. So that skills and knowledge of workers can enhanced and they perform as
per the requirement of Carnival Corporation (Kysilka and Csaba, 2013).
Employees motivation to attain goals: The HR manager of Carnival Corporation
motivates the employees so that they can show their talent and achieve the goals of organisation.
To encourage the staffs management can introduce reward system and it attract the workers to
perform better and achieve the targets of company.

Retain top talent: It is important for the Carnival Corporation to retain top talent in the
organisation because they put maximum efforts to achieve the objectives of company. To retain
top talent firm can provide grow opportunities in the terms of promotion and also can provide
incentives so that employees can connect for a long time with the organisation (Jurigová and
Tucková, 2016).
2. Performance management plan
A performance plan which is introduced in business to keep focus on the performance of
each persons and makes each individual to utilise its skill in productive manner to generate
higher revenue. A script has been designed which reflect the conversation among employer and
employee in context to rude behaviour:
The process which should be undertaken:
Manager: Can you tell me what happened outside ?
Employee : Sir, I was just not in state of mind to take ant jocks & shouted.
Manager: Do you think it is a professional behaviour ?
Employee: No sir, I am apologize for this type of behaviour.
Manager: Next time it should not be tolerated.
Employee: Sorry sir, I will take care next time.
The Process which should not be undertaken:
Manager: What happen, you were friends then how can you fight?

Manager: Just calm down and hug each other and behave properly like a friend.
Employees: (Both) Sir, we should not talk to each other and it will be the better solution.

Organisation have various disputes between employees or employer where they behave
in appropriate. These types of situation will affect the organisation because negative behaviour of
employee will generate negativity in the working environment. Manger have concern regarding
their high turnover of staff. If they all against the manageable then it will harm the organisation
in term of productivity as well as profitability. So it is manager's responsibility to prevent
disputes in the organisation. On the basis of above conversation, manager have to listen both
sides and provide valuable suggestion that is beneficial for the employees as well as for the

business. Because when employees are satisfied with work or comfortable with working
condition then they can achieve their business goals & objectives.
TASK 3
1. Identification of specific legislations
There are various laws which are needed to be follow by the hospitality industry and it
involves:
Equality Act, 2010: As per this act, it is the responsibility of organisation to treat equal
to all employees so that they feel comfortable and work better to achieve the goals of company.
Management of Carnival Corporation can comply this act and treat equal to all persons whether
it is male or female. There are no discrimination on the basis of gender equality or pay scale.
Employment Act, 2002: As per this act it is the responsibility of organisation to provide
equal job opportunities to all persons. It involves the provisions related to paternal, maternal,
adoption leaves & pay for the individual staff. Management of Carnival Corporation can comply
the regulations which are associated to this act and provide equal opportunities of job and other
benefits such as: incentives, compensations. So that interest of workers does not get affected and
they perform better to achieve the goals of company.
Health and safety regulation, 1981: It is the responsibility of organisation to follow the
regulations of this act and provide proper safety tools, measures to its workers in case of accident
or injury to health. Carnival Corporation can provide healthy and safe working environment to
their employees which protect their health and safety. Management is responsible to provide
healthy food to the staff in context to protect their health.
Human right Act, 1981: As per this act, it is the right of humans that they can visit any
where in the country and can share their thoughts and views. It also provide fundamental rights
& freedom to all persons who work in the corporation. As Carnival Corporation can follow the
compliances of this act by protecting the rights of its employees which are given by human right
act. As a result all staffs feel comfortable to work in the company and put maximum efforts to
achieve the goals and objectives (Filimonau and Delysia, 2019).

performed. The authorities has introduced distinct policies & standards which are necessary to
comply by the hospitality industry so that demands of customers can be fulfilled. The risk factor
can be minimize by following regulations of different laws. So it is important for the
management of Carnival Corporation to perform its roles within the limits of compliances so that
business of organisation can grow which leads to improve the brand image as well as sales.
In case if corporation does not follow distinct rules and regulations than company is
liable to pay fines & penalties. According to the British law 2009, the information which are
associated to name, age, background & experience should be accurate so it will be helpful for the
manager to take better decisions according to the need. It is necessary for the employees to
comply the regulations of contract law & perform their roles as per the requirement of Carnival
Corporation. Fine can be imposed on the staffs if they deny to perform its duties are per the
requirement of law. It is essential for the organisation to pay wages and salaries as per the

theme parks, tourist agencies. Different types of business have its own organisational structure
which can be considered as interlinked with each other. However, the interlinked structure
include the general manager which takes the important decisions in hotel and theme parks
whether top management take effective decisions in Carnival Corporation and give instructions
to the manager in order to achieve the objectives. The chain of command has been followed from
top to bottom that is beneficial to manage the operations of company. So that all task can be
perform according to the need of organisation (Cooper and et. al., 2019).
2. Methods of communication, ordination and monitoring applied within specific department
Carnival Corporation can use distinct methods of communication, coordination &
monitoring which are as mentioned below:
Infographic: It is a graphical representation of information, thoughts and ideas so that
important information can be pass to a large group of persons. It represents data and useful
information in effective way which is easily understood by the persons. Carnival Corporation
uses infographics to strength its value chain by providing data to see data patterns & its
relationship to effectively communicate the message and monitor the changes.
E- Mail: To communicate message it is important and better way. It is used by the

sustain in the market. In the corporation there are different functional roles which are interlinked
to each other and provide support to the corporation to achieve its goals. There are various
