INTRODUCTION
Hospitality industry is a broad category that provide different services to people which
includes lodging, food and drink services, event planning, theme parks and cruise line etc. The
report is also based upon case study of Carnival Corporation & PLC which is world's largest
leisure travel company and offer different variety of services to their customers. The present
study will produce a ledger and trial balance of give information and then provide two KPI.
Further, describe different stages of HR life cycle and present ways to resolve negative
behaviours of waiting staff. Moreover, study will reflect the potential impact of regulations,
legislation and some ethical principles for Carnival UK and then present different methods of
communication, co-ordination and monitoring in food and beverages department.

Balance Scorecard: It is the tool that focuses on company's strategic goals and also
helps to choose right things for the welfare of the company. Earlier company's judge their
performance by how much income they generate but now Balance Scorecard provides an
idea of looking at strategic measures with a traditional financial measures in order to
identify exact performance (Parmenter, 2015).
Benchmarking: This is the process of measuring entire performance of restaurants
products, services as compared to other companies. Further, it also helps to drill down
into performance gap to determine the areas of improvements. Thus, it provides
continuous and dramatic improvement opportunities for a company (Ogunlana, 2018).
There are different principles of managing and monitoring financial performance of a
restaurant such as:
A budget planning should be effective such that it achieve goals and objectives of a firm.
There is a need to keep detecting the changes by comparing actual financial results to a

Describing different stages of the HR Life Cycle
There are five different stages of HR life cycle such as:

Recruiting: Hiring the right person is the vital for the growth and productivity of every
business. That is why being a manager of Cruise ship, there is a need to create strategic staffing
plan that helps to identify the need of employee and company as well. Apart from this, talent
acquisition software also help the HR to attract top talent for the business or vacant position.
On-boarding: It is the process of getting successful applicant introduce themselves in the
company so that they feel comfortable and considered themselves as a part of a firm
(Salamzadeh and Kawamorita Kesim, 2015). Therefore, HR of firm will help them to learn about
company's policies, procedure and provide training sessions as well.
Enablement: in this stage, the manager of the Cruise bar entails orienting new hires and
formally introduces those from an organization and the company's culture, mission, vision and
values. Therefore, the orientation is basically conducted as a conference style event in which all
the information is delivered to new hire through presentation (HR life cycle, 2018).

Career development: in this stage, the manager or HR work out for long term career
goals to work within a company for a long period. Moreover, if employee established themselves
at a firm and HR must try to help in order to meet their goals. Such that they try to prepare

Termination: Some employee leave a firm or retire and at that time, it is the duty of
Food and Beverage manager to make sure that all policies and procedure are followed and also

promising and by interview they offer job to those applicants. If the accepted then provide
training session that also help to achieve long term goals. This stage also helps to convey the
exact message and provide brief culture about the company to make the employee comfortable in

Enablement: In this stage, Manager of the firm will provide introduction of company
and also ensures that the employees are also an important part and provide all necessary

Career development: In this stage, employee are prepared as per organization and for

Specific legislation that Carnival UK has to comply with
There are different laws that Carnival UK should be comply such that:
Data Protection Act, 2018: This law states that no personal information should be
shared without the consent of the owner to third party. If such things happen then company
should be penalised as per described in the law section (Carey, 2018).
Employment Law: In this law, the company should pay minimum wages to their
employees and if they do extra work then it is the responsibility of the firm to provide extra
wages (de Sosa and et. al., 2018). Apart from this, no individual should be discriminate on the
basis of caste, race, gender and religion.
Health and Safety Law: Carnival UK should also comply with this law because this
state that the company should provide proper equipment and the employers must protect the
