INTRODUCTION
Managing food and beverage operations is very important and mandatory task to a
company or business in market place which works under this same food & beverage industry. In
this modern and dynamic world, top-level management within each food and beverage company
is responsible to properly manage its different operations to gain long term benefits in market
place. However, currently many food and beverage businesses are successfully managing own
operations and business activities in their workplace by using different strategies of operations
management(ÖZKAN and BOZ, 2019). This report discusses food and beverage management of
Bread and Bean. The Bread and Bean is London based popular food and beverage café, situated
at 37, Junction Road Archway, London. There are Pizza, Mexican chicken pizza, Criss cross
fries, coffee, energy drink, lemon drink etc. are main food and beverage products and services of
café. Different types of businesses within the beverage and food industry, systems of this
industry, current & future trends, marketing technology etc. aspects also have been covered in
this report. Factors that influences decision-making of customers also has been discussed in this
report.

P1 Types of businesses within beverage and food industry
There are many types of businesses works under the food and beverage industry, like;
restaurants, cafes, pubs, cafeterias, dining halls, food manufacturing companies etc. Nowadays,
online food delivery provider businesses also become the big part of this industry. Day to day
this industry is growing, because many types of new businesses and ventures are entering in this
industry with different innovative ideas and innovations. In this dynamic and modern world, only
those businesses are achieving huge success under the industry which provides quality services
to customers (Bilbey, 2019). The main reason behind having many types of businesses in food
and beverage industry is that, ventures which provides foods and beverage always fulfils the first
human needs of customers. According to Maslow’s theory of needs, there are food, water,

clothes and accommodation are major or first needs of customers. In this situation, this industry’
ventures always fulfil food and drink needs of people in market place by providing wide range of
food and beverage items.
Currently Bread and Bean café of London is also one of major parts of this industry,
because it provides all facilities to customer relating to food and drink. For example; this
business provides breakfast, lunch and dinner facility, in which any person can simply remove its
hungriness after visiting in this café. Different pubs, bars, restaurants and dining halls also
provides food and beverage services to customers but in different manner, because each venture
of food and beverage has its own speciality and exclusiveness (Mahzura, 2018). Nowadays,
thousands of businesses work for providing delicious food and drink items in the United
Kingdom, and this is the main reason that, this country’s food and beverage industry is popular
in across the world.
P2 Different rating systems used nationally and internationally
In this modern world, there are many rating systems has used by people nationally and
internationally to give ratings to a food and beverage business or to check the rating of business.
Basically, these ratings help to a customer in marketplace for checking the effectiveness of a
business. Currently these rating systems gives opportunity to a business for improving its quality
of customer services, because when a business has poor ratings in the food and beverage
industry, then its upper management will automatically know that, it should improve its levels of
customer service for more and more improving rating in the market place (Huang and Yang,
2020). There are some major or key rating systems has been discussed below which are currently
used nationally and internationally.
Michelin star: Michelin star is the oldest tour and travel business in the world. Nowadays, this
business is used as rating system by customers in market place to grade restaurants and other
food & beverage businesses. Basically, Michelin star enables to customers or people for grading
businesses of food and beverage industry by giving one star or two stars or three stars. In this
situation, any customer can simply use this rating system to give rating a venture on the basis of
its effectiveness in market place.

Scores on the door: Scores on the doors is basically a term to display or publication food safety
inspection and food hygiene results of various food companies and ventures. This rating system
enables to people in the UK to know that which food and beverage businesses in the UK
provides an excellent quality of products and which businesses has not maintained proper quality
of food and beverage items (Kabir, 2019). Scores on the door rating system generally uses only
in the United Kingdom, and it motivates different companies in this nation for day to day
improving quality of own food or beverage items.
Internet rating: This rating system is the most productive system of rating to people and
businesses in the market place, because internet rating system enables to people for giving rating
to a food and beverage business on the basis of own experiences and satisfaction. Currently
many websites are available on the internet, like; TripAdvisor, Expedia, Booking.com, Food
panda etc. in which these all websites give facility to customer for giving ratings to any
restaurant or hotel or café of dining hall etc. In this situation, after vising these all websites, any
customer can simply give rate any food and beverage business, and these websites will also
enable to check effectiveness of a food and beverage business in market place after seeing its
ratings on these websites. This rating system is currently used by people in across the world,
because this enables to give online reviews and feedbacks also to businesses in market place.
These all are some major rating system which customers of food and beverage industry
uses for giving ratings to Bread and Bean business (Uzoamaka and Ugwu, 2017). By using these
systems, customers can simply give their feedbacks to existing as food venture as well.
P3 Current and future food and beverage trends
Currently there are many factors exists in the business environment of Bread and Bean, in
which upper management of this food and beverage business need to take some productive steps
towards systematically deal with impact of these all factors. Basically, these factors can affect
business in both manners, positively and negatively, and that’s why this is necessary to venture
for properly dealing with these factors. There are some major current and future trends of this
industry has been discussed below;
Healthy dieting: Healthy dieting factor currently trends in market place, and this factor will
trend in the future as well, because now people aware about the impact of taking healthy in daily

lives (Zhu and Krikke, 2020). Basically, unhealthy food badly affects to people’s health aspects,
and this is the main reason that people has chosen option of healthy food for always being
healthy. People with like to eat healthy food in the future as well, and this is the main reason this
healthy dieting factor can affect to Bread and Bean for always preparing healthy food and
beverage items to earn huge profit.
Veganism: Veganism is currently highly trending in market place, in which upper management
of business have to understand the basic concept of this trends. Basically, this trend is motivating
people to avoid eating meat in their daily lives, in which this factor will affect to business for not
preparing meat products in its workplace (SARIOĞLAN and YABACI, 2018). Day to day many
people become vegans in market place, in which this veganism factor will trend in the future as
well. This is factor can affect to Bread and Bean for preparing only veg foot and beverage
products.
Critical analysis
Currently healthy dieting and veganism factors are highly affecting to Bread and Bean
business in market place. In this situation, upper management can earn profit margins and meet
its business objectives in market place by properly considering these factors (Nielsen, 2020). For
example; it should be focused on preparing only healthy and quality food and beverage items,
because this attribute of this venture attracts maximum customers in market place, and then it can
simply meet with business objectives and targets.

P6 Operational and marketing technology for food and beverage business
Bread and Bean London has got in marketing technology for the restaurant to be able to
operate effectively and have higher performance despite the competition which is present in the
market.

because the products which Bread and Bean is providing to the customers are basic but of good
quality which is why placing them next to residence is important. The outlet will have to be
attractive as well as informative so that they can have higher sales which are going to be
effective for the company to have in the market. There are well established organizations which
are currently operating and local breads and bakers as well which are there and competing with
them is difficult but having the right positioning of Bread and Bean is going to make the
organization have higher operations (Jackson, 2017).
Blogging and email marketing
Bread and Bean will have to make sure that the customers are aware of all the details ad
changes which the organization is getting in for their satisfaction. Customers are shifting for
healthier products and services which have to be well maintained so that the satisfaction and

will want to have for them in the market which will have to be maintained so that the business
can progress easily in the market so that there would be higher performance which would be

The factor which influences the decisions on which outlet the customers must be visiting
is on the interiors and exteriors of an outlet. There is a lifestyle which has changes in the
population of London and that has to be matched so that the customers are going to get attracted.
The menu and lighting of the outlet also makes a lot of difference which is that the organization

will have to get the right font and lighting for the customers to read the menu. There has to be
good placement of the tables and distance between the customers so that they are going to feel
comfortable as well (Nagib and et.al., 2016).
Pricing of the products and services is another factor which is going to influence the
decision making of the customers. There must be good distribution of work between the
employees as well so that the services are going to match the expectation and standards of the
customers otherwise their experience is going to be influenced and they would not want to come
again in the restaurant. Customer’s behaviour is very predictable which is why the company will
have to have a good understanding so that they can have a positive influence in their decision
making. The services and products quality has to be good so that they are going to get attracted
in the restaurant which is going to be beneficial for the company as well (Nirino, Miglietta and
Salvi, 2019). Advertisements and branding in the market is also going to influence the decisions
of the customers which is why Bread and Bean will have to find ways to reach out to the
customers which the organization is targeting for in the market so that they can have the right
sales which the organization is expecting for themselves.
P8 Strategies used to build loyal customers and attract them
There are a lot of strategies and measures which food and beverage industry can take to
make sure that the loyalty of customers is improved and attracted more customers as well. The
following report would be discussing these factors in detail.
Improve brand quality
Bread and Beans will have to find ways through which they can improve the brand image
and quality of portfolio and reputation in the market so that there are more stores which can be
invested in (Mahafzah and et.al., 2020). The organization is very focused on their quality but
there have to be more unique varieties as well which the company will have to get to attract more
customers which are good for the sales and loyalty of the customers which is going to be present
in the market.

so does the customers must get this factor which are loyal so that there is a kind of promotion
and stable sales which is going to be present for Bread and Beans.

organization will be improving according to the demands and expectations of the customers
which is a very important factor for the organization to have.

The employees which are working in Bread and Beans will also have to be trained according
to the expectations of the customers. There is a set expectation and standard which customers
have for their lifestyle and they have to be matched and that can be done when the employees are
going to be professional enough to get in those changes for the benefit of the customers (Salim
and et.al., 2018). Bread and Bean will have to set loyal customers since the competition in the
market is high and it is important for the company to be able to operate effectively.

On the basis of above findings, it can be concluded that existing food and beverage
industry is one of the largest industries in the international market. Currently millions of
businesses are working in this industry, because it provides great growth opportunities to a
business. Currently Bread and Bean café is also gaining effective outcomes in market place by
adopting different productive operations management techniques. There are lots of current and
future trends affects to business operations of Bread and Bean café in market place. It can be also
concluded that, upper management of have to run some productive marketing campaigns in
market place for attracting many new loyal customers in the UK’s food and beverage industry.
After deeply knowing about the consumer decision-making journey, this venture can easily
provide great experience and satisfaction to different customers, and then it will enable to gain
huge competitive advantage in market place.
