Introduction
Restaurant sustainability is the concept where food businesses work by keeping in mind
that their activity should not harm their planet especially with the issues like food wastage,
energy and water consumption, food packaging, recycling, hygienic factors and many more
(Goel and et. al., 2019). In simple word sustainability is the word used to fulfil the needs of
present as well as future generation by making appropriate use of resources and make sure that
less or no wastage of resources will take place. Septime is a famous restaurant in Paris, France
which is established in 2012 by its founder Bertrand Grébaut. This restaurant is famous for sea
foods and for its wine stores. The following report covers event cycle, event research, event
operations, feasibility study, budgets, industry trends and cultural analysis of mentioned
restaurant.
Main Body
The event cycle
It include 12 steps in event life cycle and these 12 steps are divided in 3 major stages of
before event, during event and after event-
Before the event: set the foundation for success
Step 1- Determining goals and objectives
First step is to find out the purpose of event that why it is organising and that it the main
aim is conducting the event (Norman and Nyarko, 2021). This step also covers to decide
sponsorship and vendor partners. In context of Septime, they determine the main purpose of
events and decide how it will be manage in given period of time.
Step 2- Put together a working budget and price the event
After analysing events purpose and aims it is essential to make budgets for each
activities help in events. This stage also includes determining the price of tickets of the events for
its guests. Prices of events must be set according to that price which will be covered to
breakeven.
Step 3- Set the date and venue
After analysing budget for the event it is necessary to fix a date for event that on which
date and what are timings of the events (Sancho and et. al., 2020). It is recommended for
Septime to fix at least two dates, one is suitable for all stakeholders to join and another for

backup that in case if event get postponed on set date then it will be conducted on second set
date.
Step 4- Searching for sponsor, speakers and performers
Now it’s the time to search for sponsors and other people important for event. Here,
restaurant should decide their sponsor according to the purpose of event like if the event is about
sports then a sports person orb a sports company can be a sponsor and if the event is about the
business and entrepreneurs then the sponsor should be a famous business man.
During the event: control the chaos
Step 5- Don’t lose paperwork
Some of the activities are require to measure on paper. Hence, the event organiser must
focus on fulfilling the needs of paperwork wherever it is required in the event.
Step 6- Enough staff on hand
It is compulsory that there is enough number of workers in the restaurants to handle the
events and their services (Radoglou-Grammatikis and et. al., 2021). Lack of staff impacted bad
upon event reputation as well as the on the reputation of restaurants. It is recommended that
Septime must analyse the requirement and number of their staff members for the events.
Step 7- Seamless experience for attendees
To deliver a good experience to their attendees it is essential to use some advance
technology like cashless payments, booking of tickets through event apps on mobile phones and
many others.
After the event: Reflect on result
Step 8- Ask for feedback
After organising a successful event it is essential for restaurants to ask for feedback in
which their attendees must mention that what they like and dislike about the event. It also
includes suggestions from client side to improve some services.
Step 9- Dive deeper into conversions
It is essential for Septime to recognise which campaign helps them to sell more tickets
and what all factors are useful to sell tickets to their targeted customers so that next time they
will use the same process to increase the sale of their tickets.
Step 10- Track ROI
Document Page
Another step is to analyse how much they earn by organising specific event. Minimum
amount of earning of an event must cover the breakeven point of the event in which all cost
which is spending by restaurant must be covered.
Step 11- Compare results to goals
It is the last step of event cycle where the end results are compared with the goals of
event. It is measured that the revenue which is planned before to earn after event is actually the
same after event or not (Tiwari and et. al., 2020).
Hence, it is evaluated that for organising any event it is compulsory to follow some
important procedure from planning to recognising results after event. In context of Septime, they
also follow same procedure to plan and deliver the services of events in their restaurants. Due to
this reason their most of the events are successful and they always look for improvement after
every event so that they will represent next event more successful than the previous event.
Event research
Event research is done before event as well as after event. Event research before event is
helpful in knowing the thoughts and requirements of attendees that what type of services they
like and what are their satisfaction level so that event organiser works according to that
(Antchak, Ziakas and Getz, 2019). Research before event identifies all resources and
technological aspects required in the event so that restaurant will arrange according to that. It
also states the budget for organiser which is one of the most important parts of event. Here,
researcher analyse the behaviour of event attendees and analyse the requirements of their
attendees for event. This research includes-
1. What kind of budget is required?
2. Who are the targeted audience?
3. What will be date and timings for event?
4. How to invite all attendees?
5. What will be the prices of tickets?
6. What services and technological factors must include satisfying attendees?
On the other hand event research is also done after conducting the event to know that
whether the event is organised in a same manner which is planned or not (Sen and Rajagopal,
2020). It include that what are the impacts and mindsets of event on their attendees and also on
restaurants. This research includes-
Document Page
1. Matching of actual event with planned event and analyse the result.
2. All activities of event are done under budget or not and in case it crosses the budgets then
how much budget is required extra and at which activity.
3. In case less attendee attends the event then to analyse the main reason behind this.
4. Cross checking the behaviour and excitement of attendees before and after the event.
Some basic requirements in event research
It requires the ways of finding targeted audience. In context of Septime, they mainly use
social media sites to attract the attendees for events. They post the pre event pictures at their
social media accounts and they also contacted their targeted audience by researching last year’s
event which is held for the same purpose (Balco and Studeničova, 2019). They invite same
audience and also allow invitation of new attendees. This is how they reach to their targeted
audience. For inviting the attendees, the mentioned restaurants must go formal like using e-mail
and other source of invitation to their targeted audience. In is necessary that invitation must
provide some good information and purpose of event because attendees will only attend the
event when the message and purpose of event is clear that why and when the event is organising.
Invitation of event should be sent to those attendees only whose interest is to attend the particular
type of event. For example in case social media influencer gets the invitation of other field like
Hollywood events or events on business then it will ineffective. Hence, it is compulsory that
social media influencer will get the invitation of social media events.
The feasibility study
The feasibility study states that how feasible the event is in terms of economy, research,
technology, budget and many other factors. In context of research, the feasibility is depend on
time of research that it should not be conducted too before the event as well not too late after the
event and it must cover all required aspects that is required in research. Another way to check the
feasibility of research which is done for event is that whether the event is going correct or not
related to research (Xu and Cheung, 2020). In case the event is held according to the research
then it is feasible and in case attendees are dissatisfied then the research is unfeasible.
Event Operations – the practicalities
It includes all required department for managing the event. In context of Septime
restaurant they are having few departments and they are discussed below-

Event coordinators- It is the main department in event organising. Coordinators are
responsible for arranging, promoting and organising the events properly without any issues
(Kaiser and et. al., 2020). They are also responsible to conduct the meeting with clients,
coordinating activities with budgets and hiring contractors for events. They are required to have
better skills of communication, networking, time management manage resources effectively and
many others.
Event Planner- It is the another department which is responsible for planning for
events that how it will be organised, what all resources is required, what will be the date and time
of event and many things. Event planner must coordinate with event coordinator to convey the
messages of effective plan.
Event assistants- This department is responsible for providing services for guests from
check in to check out. They always take care that their guest will get every services of the event
which is decided in planning. Solving the issues and complaints of guests are another important
role of event assistants.
From the above information it is evaluated that each department is responsible to make
the event successful and they are required to coordinate with each other on regular basis. All
departments work together and communicate on regular basis with each other to share their each
other’s research results.
Industry Trends or Cultural Considerations that were considered
It is essential to consider cultural factors and industry trends before organising any
event. Industry trends are those modern and new resources which are used by events to make
their event more effective (Priporas and et. al., 2018). Here, most important aspect in events from
industry trends is the technology used in events and the way of promoting events. In context of
Septime, they consider the current marketing trends like what are the modern technologies used
for what purpose and they apply it for making betterment of events. Industry trends also cover to
study the factors affected by competitors. Here, Septime also analyse that who are their
competitors and how they impacted upon their business. They analyse that what all technology
and what are procedure their competitors used to make their event successful. The technology
which are used while event planning are event management software, mobile event apps, virtual
platform of event management and many others. On the other hand the most used technology
while delivering event services are Facial Recognition Technology which scan the faces of

attendees so that next time when they arrive related to same event then the event organiser get
the data of the attendee (Prayag and Grivel, 2018). It will help in inviting the attendees for next
time in case restaurant organise the same kind of events.
In context of cultural factors is most important to consider the culture of attendees in
context of international events. It is important because the music, services, food delivery and
many other parts of events are depending on cultural factor. Music which is played must match
the culture of attendees so that they like it. Food menu also cover cultural factor like if event is
organising in UK then the food dishes which is famous in UK will be provided to attendees and
in case the same event is organising in Asian countries then Asian food is preferred. Event is
fully depending on cultural forces from providing services to deciding dress codes (Korir, 2018).
It is important for Septime to consider some factors related to culture in their events and they are
mentioned below-
1. Budget and fixing the prices of tickets according to the purchasing power of
attendees.
2. Dress code for attendees as well as for staffs.
3. Food menu should be perfectly matches the culture of attendees.
4. Music or other voice instruments must be related to attendee’s culture.
5. Date and timing of event is also impacted by culture. Some people prefer to have
events at night and some country people are more satisfied with day timings
(Mladsi and et. al., 2020).
6. Theme of events should be based of culture if the event is related to cultural
event.
Hence, from the above information it is evaluated that industry trends and cultural
factors plays an important role in event management. Industry trends help to identify the modern
technology for event planning and delivering phases. Cultural factors help to identify how the
whole event should be organised to make attendees satisfied without harming their insights for
their cultures.

proper process of handling each activity effectively from planning of services to delivering of
services. Event research is also important to know about the target audience and the way of
promoting the events to attract targeted audience. Event research helps in many activities like
analysing the result of event after the event get over. It also covers the budget of events.
Different department is responsible to conduct event successfully. Industry trends and cultural
factors are one of the most important factors which must be determined for events.
