Executive Summary
The Serene Residential Care Service is constantly evolving by improving its process of
facilitating care by enhancing appetite of the residents and upgrading their lifestyle.
The main purpose of BlueDawn Nursing Home is to review and effectively develop
excellent quality of food and services. It can be achieved by improving the nutritional diet for the
dementia residents in Serene Nursing Home and abiding by the revised standards of Old-Age
Care Facilities and Audit Tool. The tool has been developed to provide standardized
methodology to review adequacy of the menu, as well as offer clear and concise pan for the
development of nutritional care and appetite for the residents.
The quality of care and individual services for the residents concentrate on improving
activities and facilitate useful advises to the lifestyle coordinator. The services will have a wider
reach as they will be offered in various target markets catering to the needs of the people with
dementia. The other objective of the plan is to create opportunity for great dine-in entertainment
experience which will ascertain loyalty points to the residents.

Introduction
Serene Residential Care Services is provides care facility to its residents who all happen
to be Dementia Patients. The capacity of accommodation of the organization is 43 as there are
same number of beds available. The establishment is situated in the Lockleys area at Henley
Beach Road which lies opposite to Peaceful Mellor Reserve. The organization is the facilitator of
Aged Care Services has earned itself superior reputation in the Western suburbs of South
Australia. The organization has a highly professional and dedicated team who strive to provide
quality Services. The same was demonstrated in 2013 when Serene Residential Care Services got
the recognition for being the Leading Aged Services Australia (LASA). They also received SA
Inc. Aged Care Excellence Award which makes the company boastful for great track records.
The nursing home has made immense award to push itself towards excellence across all
standards of healthcare and hospitality services for residents. Serene Residential Care Services
provides high quality care to individual residents round the clock. The other services which are
offered to the residents include various range of Clinical Care, Speech Therapy, Dietitian and
Professional Health Plan.
BlueDawn HealthCare is owned by three directors and was founded in 2010. The
organization commenced its services in February 2012. Presently, Serene Residential Care

Services is a Commonwealth Funded Aged Care Facility which is operated by BlueDawn
Healthcare in South Australia at the Lockleys.

Vision
The Vision of the organization is to become the leading company to offer Aged Care
services to older people of the society which meet standard and quality of the industry and well
as set benchmark.
Mission
BlueDawn Pty. Ltd. is dedicated to offer services which are of optimum quality to old
people. The services are to consistently meet the expectations and needs of the resident’s
individual care within a clean, safe, secure and home-like environment.
Values
1. The cultural backgrounds of the people are immensely valued and respected alongside
privacy, and dignity of every person associated with the organization.
2. The company is responsible for providing efficient services which meet great quality too.
3. The best interest of the residents and staffs are looked after and cared for.

Discussion
The relevant information and details have been collected which have helped in the
development of the report with the permission of the Executive Manager. The documents and
details which were contributory and were accessed in the process of evaluation of the services
include diet charts, information about the culture, diet restriction and budget plan. These data are
preserved as they are confidential and privacy of the employees and residents are protected by Le
Cordon Bleu and Serene Residential Service. The budget which is allocated for 43 beds amount
to $6665. Therefore, the cost of a bed for each day, as availed by the residents is $5.

According to demographic data, the total number of people residing in the nursing home
is 41, to whom high care is provided for Dementia. The average age of the residents is 80, while
the age of the residents are ranged in between 59-99. According to culture and dietary needs of
population, 2 residents have restrictions on ham and pork as they are not allowed to consume
them. Texture modified dietary requirements include (5 soft diets, 7 mince moist, smooth pureed
11, thicken fluids 12, lactose intolerance 2) also freshly cooked food is served to the residents.
Main meal time for breakfast is 8:00 am, lunch is served at11:45 am while dinner time
commences from 5:00 pm. The mid time meals which include morning tea, is scheduled at 10:00
am, afternoon tea is served at 2:00 pm and supper time is set to be at 7:00 pm.
My responsibility as a hospitality manager is to employ technical expertise and high-level
influencing skills and supervise Site Operations Managers, Chef Managers, and our Senior
Dietitian. The intention is to contribute to a culture of resident collaboration, best practice
methodology, and continuous improvement of the cause. The main purpose for this duty is to
develop innovative solutions on food safety, menu development, purchasing, and workforce
management.
As newer technologies and advancements have emerged, quality of health care has also
improved. High quality food services are to be provided to our residents, which is to be set as the

priority. Top solutions of texture modified food are to be found and implemented for those who
have specific dementia disease.
Dementia cannot just be categorized as a disease, but a collection of symptoms which
occur which are associated with loss of memory. People become incapable to think in a proper
manner which also make it hard for them to effectively communicate their thoughts. Therefore,
people who have condition of Dementia lack concentration and understanding of life to a great
degree (Gruetzner, 2001). Such patients thus tend to forget simple information as well as have
short term memory loss. They become incapable of preparing and planning their own meals. The
focus on scheduled activities in daily routines might be lost as they lack coherence about their
living conditions of the present life. Hence, it is important to provide care and support to the
residents as they are unable to do it themselves. Care and services are offered by caring
assistants, nurses, language and speech therapists, dieticians and so on. (Ayuso-Mateos, 2001).
However, it can thus be stated that there is need to conduct research in this direction to a
considerable degree to address the issues of maintaining food habits and life balance. The
primary goal will be to correctly identify the major shortcomings and reasons which lead to the
inadequacies in the nursing home to provide care and support services. The intention will also be
to provide valuable solution for the issues which will contribute to better the condition and offer
better food items prepared for the patients to enhance their appetite. There are risks which are

associated with such practices of meagre eating behaviors, like, loss of weight, malnutrition and
dehydration. Close attention needs to be paid to resolve such issues.
Quality Management Techniques are to be improved in the organization which will
ensure that quality is maintained while preparing food and serving them to the patients who have
been diagnosed with the condition of Dementia. Dementia can be caused by thyroid problems,
depression, vitamin deficiency and even arising from side-effects of medication (Rasmussen,
1992).
Thus, it can be understood that standard quality services are to be provided to the
patients. The nurses who are responsible to provide services and care, should be well trained and
must be well treated, which will enable them to be more sensible towards the cause (Bradbury,
Thomason, & Jepson, 2003). My target plan, will, thus be focusing on major issues which are
faced by patients who have Dementia and addressing them to bring resolution.
The most challenging aspects of the placement
• Menu review employing best principle practices for effective planning of the menu
which takes into account the religious, psychological and cultural needs of residents which
necessitates intake of high nutrition and planning of diet.
• To check all the activities and their effect. The intention is to improve brain function of
the patients and bring joy for them.

• Promoting personalized programs, including activities, using Montessori methods. The
Leisure and Lifestyle Program encompasses social, physical, emotional, intellectual and spiritual
aspects of our residents’ lives.
• Activities which are planned will meet individual needs of the patients which will take
into account aspects such as lifestyle, personal interests and background details. The activities
will be planned while keeping the ability of the residents in mind rather than generalizing.
• Evaluation of nutrition diet and the level of standard texture modified diet. The aim is to
improve the best plan for increasing of appetite and deliver quality food in the simplest way
possible.
• Reviewing of the budget plan for all the combination of food and good and service and
then suggest appropriate recommendations based on the evaluations.
• The dining room atmosphere is strongly influential and impact food habits of the
residents. It is, thus, necessary to serve nutritious as well as delicious food. However, if the
environment of the dining room is not appropriate, it can lead to wastages of food and unhealthy
food and hygiene habits.
• Lack of communication during the service of meal for resident.

• Improve the role of staffs and resident communication and understanding of person
centered care.
• It is important to reinstate that the residents matter and their existence is special.
• Misunderstanding will be reduced with the help of effective communication. The needs
of the residents will be better understood while diagnosis will get easier with communication and
opportunity of expression.
• High self-esteem of the residents are to be brought up.
• The residents will feel less lonely and alienated.
Conclusion
Therefore, it can be concluded by saying that the Bluedawn Nursing Home is focusing on
to enhance its services by offering better services and care to the patients who have the condition
of Dementia. Relevant information have been collected form the organization with the
permission of the executive manager, which has helped in the process of conducting research.
The Serene Residential Care Service intends to improve facilities which are offered to the
residents by upgrading their system and enhancing food habits and diets which are offered to
them. People who have the condition of dementia often lack the ability to have their own meals
and coordinate dietary habits.

The aim is to propose recommendations to amend the menu as per nutritional
requirement of the patients, which will improve their health and condition of mind as they tend
to be forgetful, the most. As have been discussed in the report after conducting research, better
services can be can be provided by facilitating various services and coordinating activities. The
experience of the residents can be enhanced by making their dining experience entertaining and
engaging, which will allow the staffs to better understand the requirements and cater to them as
necessary.
Recommendation
1. Most common issues for people diagnosed with the condition dementia are
malnourishment and loss of weight. People who have the condition of Dementia, may
develop symptoms which will affect their mechanisms such as food habits and intake of
fluids. Damages caused to the brain tissue may as well lead to uncontrolled appetite, anorexia
and impairment of cognition. Patients may forget to have their meals on time, make choices
about food as they tend to become incapable to communicate their thoughts when they feel
hungry. Such behavior may as well escalate to the level of reduced interest to consume food.
These might cause agitation, wandering tendency or aggressive behavior, which can cause
negative impact such as withdrawal to participate in meal times and unwillingness to spend
energy.
