This project outlines the development of a halal menu designed for Muslim refugees residing in a community shelter, taking into account their diverse socio-economic backgrounds and specific dietary requirements. The menu adheres to Australian Dietary Guidelines while respecting Muslim cultural and ethnic sensitivities, ensuring halal food preparation and avoiding prohibited ingredients like pork and alcohol. The menu incorporates low-cost raw materials to ensure affordability, and features a variety of flavors, textures, shapes, and colors to provide essential micro and macro nutrients. The project includes menu costing, performance monitoring based on customer feedback and dietician evaluations, and suggested improvements for future iterations, such as incorporating more indigenous middle eastern recipes to enhance customer satisfaction. The overall goal is to provide a nutritionally adequate and culturally sensitive menu that meets the dietary goals and preferences of the refugee community.
