Companies: A Case Study on Subway
ABSTRACT
The purpose of this research study is to explore the significance of waste audit and waste
management in the food industry of New Zealand. To narrow down the research subject,
Subway, the subs and salad restaurant, has been chosen as a case study. It has been noticed that
the amount of waste is quite high in the food industry, and in New Zealand, the level of food and
inventory waste is a serious concern for the government and the food industry. The incidences of
food insecurity, malnutrition, hunger, poverty etc. are increasing quite rapidly across the world
and hence, the sustainability in the food industry should be implemented. To achieve the
sustainability, the primary step is to reduce the food and inventory waste and control that.
Subway also faces the challenges of high amount of food and inventory waste, which not only
affects the food production but also increases the cost of operations and reduces level of profit of
the Subway outlets. Thus, through this research study, the effectiveness of waste audit and waste
management will be evaluated.
A research proposal has been prepared to provide an outline of the study to be carried out. The
aim, objectives and the research questions are presented, followed by an extensive literature
review and the methodology that would be adopted to conduct the study. The estimated cost and
timeline are also proposed in the research proposal. A presentation is also provided that outline
the background of the study, aim and objectives, scope of research, and brief of the findings from
the literature review. The importance of food waste control is also discussed in the presentation
along with examples of New Zealand and USA. Lastly, a summary of the findings from the

interview conducted on a manager and an employee of Subway is also presented in a tabular
form.
In the next part of the research, a detailed report will be prepared by analyzing the interview
responses and secondary information to get to the conclusion of the study. Based on the findings,
some recommendation will be provided to improve the efficiency of the waste audit and
management system in Subway and reduce the amount of food waste.
