Outline the most important developments in sushi history, from the earliest times to the present.
The word Sushi is derived from two Japanese word 'Su' which means vinegar and
'Meshi' which means rice. Sushi is most popular dish of Japan which is made of vinegared rice
and fish with added soya sauce and wasabi. In Japan, the process of sushi was originated in 9th
century. At this period Japanese still prefer to eat meat and drink milk as it was considered as
common practices. As Buddhism slowly made progress in the country, eating meat became
prohibited and people moves towards eating fish (Trevor). Enhancement of fermentation
techniques was rapidly increased during 15th and 16th century. The 6 month long preservation
now reduced to only one month and rancid rice which was cast-off, could now be eaten.

Different varieties of sushi
A dish which known in present time 'narezushi' was the earliest form of sushi. It was
originated in the paddy fields of Mekong river in Southeast Asia (Sushi). Salt and rice was
sprinkled in order to prevent putrefaction during the process of developing prototypical narezushi
through lacto-fermentation. In the beginning of 17th century a new type of sushi was discovered
which was known as Funazushi (Trevor, 124). It was prepared by preserving funa in salt and
aged for years before repacking. The end result was fermented dish that served with sliced thin
or was used as ingredient to other dishes.

The fourth generation sushi known as Edo-Mae Sushi. It was developed in Tokyo and
they often dealt with fires (Sasha, 251). The fifth generation sushi also known as Modern Day
Sushi is the raw fish slices which morphed from humble foodstuff. With the increase in
technologies and refrigeration process, sushi made of raw fish can be delivered to consumers
more rapidly and efficiently (Kinds of Sushi).
