1.1The scope of the hospitality industry refers to the range of businesses that provideservices and facilities in UK. The hospitality economy is one of the field in the country whichhas continuous growth prospect in job. This industry of hospitality has been a great source forgenerating employment in the country. In employment term , restaurant are easily the largestsector, closely followed by a pubs , bars and club with the hotel sector. It is estimated that400000 jobs in hotel and related services. It have 26m jobs in restaurant, 75000 contractscatering and in hour catering job, 20000 job in event management (Simons, Vermeulen andKnoben, 2016). This industry diversified in many field such as hotel/lodging, frontoffices,travel agencies,house keeping, marketing &sales, restaurant and bar. From one survey itis found that visitors spent close to 12 billion pounds of a total value of 76 billion pounds whichwas the total amount of tourism.1.2Hotel Travel and tourism In Marriott hotel, it follows the lineorganizational structure. In this there arevertical relationship between different level inthe firm. There are only line department whichis directly involved in accomplishing theprimary goal. For example line departmentincludes production and marketing.Bothdepartment manager are work under the CEO .They have direct vertically relationshipbetween different level in the firm.In the Thomas cook travel agency there aredivisional organizational structure. The firmcan have different basis on which departmentare formed such as function, product,geographic territory, project and combinationapproach (Kim, Vogt and Knutson, 2015).Structure based on division of work based on afunctional activities such as finance,marketing, etc. or based on type of productsmanufactured or based on geographicallocation of the units. 1.3Academy of food and wine service- The Academy of food and wine service is theprofessional body for front of house food and beverage service in UK hospitality3
