Hospitality industry include different sectors which provide product and services to
customers in order to satisfy their wants. These sectors consist of food and beverages, travel and
tourism, lodging, recreation etc. This study is based on Food and beverage sector od hospitality
industry.. Food and Beverage sector lays emphasis on providing their customers with high
quality products in order to gain profitability. This study will explain about various types of
business which are performing their activities in food and beverage industry. Furthermore, this
assignment will explain about different rating system which are being followed in different
hotels working in food and beverage industry. This study will discuss about the current and
future trend which will affect the food and beverage industry. Moreover, this task will include
various legal requirement and regulatory standards that food and beverage service outlet must

P 2 Different rating system used for food and beverage industry nationally and internationally
Rating system is used to rate the hotel and various sectors of food and beverage industry
to measure the quality and facilities of different sectors in order to differentiate which hotel is
providing best services to their customers.
Score On The Doors : This rating system is used to rate hotels and restaurants in order to
maintain food hygiene and food safety while preparing the food. This system provide customers
with an understanding that the hotel is maintaining food hygiene and safety which is required to
serve quality food to its customers. It provides grading on the scale of 1 to 3 (Del Chiappa,
Martin and Roman, 2016) . One star indicate that the hotel require major improvement to in
order to maintain food hygiene and safety. Two indicate that some improvements are required
under hotel. Three indicate that hotel is maintaining food hygiene properly.
Michelin Stars : This system of rating is implemented to rate hotels according to their
product and service quality. This rating system is based on red Michelin guide. It rates the hotel
on the scale of 1 to 3 according to the quality of products delivered by the company. One star is
given to those hotels which provide high quality products to its customers. Two star indicate that
the hotel is involved in making excellent cooking strategies which attract more customers
towards them. Three stars are provided to those hotels which have excellent cuisine which is
worth visiting.
AA Rosettes : This rating is awarded by the inspector of the hotel known as AA
inspector. This is awarded by the inspector on the basis of quality food delivered to the
customers. This system of rating involve 1 to 5 Rosettes to rate the hotel. One Rosette is
awarded to those hotels which are raising their standard in the area where they are situated by
improving their skills and knowledge while preparing the food. Two rosettes are awarded to
those hotels and restaurants which are working with consistency to increase their standard by
supplying good quality products. Three rosettes are given to those hotels which prepare food by
selecting higher quality ingredients for cooking. Four Rosettes are awarded to those hotels and
restaurants which have technical skills, intense ambition etc. Five rosettes are provided to those
hotels and restaurants which inspire others by performing their best in their sector.
Hotel Stars : It is awarded to hotels on the basis of facilities provided by them. These
facilities consist of Accommodation facilities, infrastructure facilities, room service, food

facilities etc. These rating are provided on the scale of 1 to 5. One star is given to those hotels
which are providing fewer facilities such as these hotels does not provide rooms service and
bellhop services. Two star are given to those hotels which are providing personal atmosphere to
their guest and these types of hotels are maintained by sole proprietor(Hotel Star Rating Guide-
How Does a Hotel Get 5 Star Rating, 2018). Three star hotel provide services such as good
quality room facilities etc. these hotels does not provide bellhop services. Four star is awarded to
those hotels which have good infrastructure facilities and accommodation facilities .It also
provides bellhop services. Five star hotel provide high quality service to their guests such high
quality food services , accommodation facilities, high quality infrastructure etc.

P3 The current and future trend affecting food and beverage industry
Robot Waiters : The food and beverage industry in which robot will be used to do the
various tasks of the hotel and restaurants such as delivering food, cooking food etc. Robot
waiters will reduce the current trend of using humans for providing various products and services
to the customers (Robotics: Present State Future Trends, 2014). These will reduce the cost of
paying and increasing the efficiency level of the organisation working in the food and beverage
industry. Robot waiter will make the working fast and will help the organisation in fast
delivering of the product and services . The disadvantage of hiring robot waiter is that it will
affect the organisation if their battery got discharged and this system will also create
unemployment. Robot waiter will attract more customers in the food and beverage industry and
thus it will be implemented by many restaurants and hotel in the future.
Street food : Street food is gaining popularity day by day. Street food include different
varieties of food items such as fast food etc. which is most popular among the youngsters. It is a
ready made highly processed food which is served to customers very fast. Street food business
does not require much investment and it also attracts more customers than the other sector of
food and beverage industry due to its cost effectiveness (Dopson and Hayes, 2015). Street food
also have some disadvantages because the food which is being delivered to the customers
contains fatty acid and also in not processed in a hygiene manner. Street food is unhealthy
because it causes constipation, high sugar, cancer, fat, lower memory, Polycystic Ovary Disease,
infertility, liver failure etc. According to the current trend of street food it will be gaining more
popularity in the future as young generation is more attractive towards fast food and street food.

Bluetooth connectivity is gaining popularity nowadays . This trend of using mobile as room key
have provided the public smooth access to their place. Using mobile as room key will help the
guest of hotel to unlock their room with the help of mobile in case of any contingencies (Jones,
Comfort,and Hillier, 2016). These are some disadvantages of this system which affect the trend
of this system is that in case of stolen mobile the guest will lose the privacy of the room and
there may be cases where the mobile may be hacked and hackers demand ransom in order to

attract customers as it will set a new trend in the future generation where mobiles will be used to
unlock the doors. It will reduce the chances of theft and also provide easy access to the
